Candied Citrus Peels











Yummy Candied Citrus Peels:
2 grapefruits, 3 oranges or 4 lemons
4 cups of sugar
4 cups of water


1. Peel fruit. Slice peels into 1/4" wide strips.
2. Place strips in large saucepan and bring to a boil, then drain. Repeat twice.
3. Bring sugar and water to a boil stirring until sugar dissolves. Add strips to boiling syrup, reduce heat to medium-low and simmer gently until strips are translucent, about 1 hour. Let strips cool in syrup.
4. Using slotted spoon, transfer strips to a wire rack. Wipe off excess syrup with paper towel, then roll strips in sugar. Let dry for 30 minutes.
5. Melt dark chocolate ( I use Green and Blacks really dark chocolate) in microwave and dip ends of peels into melted chocolate.
